Red and Green Pepper Sauces

Green Sauce

  • 2 Poblano Peppers
  • 2 Tomatillos
  • 3 Jalapeno Peppers
  • 1 Tbsp Olive Oil
  • Juice of 3 Limes
  • 1/2 Cups Yellow Mustard
  • Salt and Pepper

Red Sauce

  • 2 Red Bell Peppers
  • 2 Orange Bell Peppers
  • 1 Tbsp Olive Oil
  • Juice of 3 Limes
  • 3 Tbsp Tomato Paste
  • ½ Cup Yellow Mustard
  • ¼ Cup Apple Cider Vinegar

Instructions

  • Halve the peppers and or tomatillos
  • Remove seeds from all peppers
  • Coat in olive oil and roast in a 400 degree oven for 30mins until slightly charred
  • Remove from oven and chop peppers and tomatillos into small pieces
  • Place them in a jar/bowl and one by one add the remaining ingredients
  • With an immersion blender blend the ingredients into a smooth sauce.
  • Cover and store in the fridge for up to 2 weeks
